Italian herb crusted pork tenderloin

pork_03This one is for Hersch. I’m on day three of making dinner this week. Tonight I made the Italian herb crusted pork tenderloin from Simply Homemade. Chris and I put this together when we went to the Crystal Lake store at the end of March.

The pork tenderloin is pretty easy to make. I don’t exactly remember what we put into the breadcrumbs, but it looks like rosemary, oregano and Parmesan cheese, but don’t quote me on that. I rolled the tenderloins in the breadcrumbs and seasonings, then placed them in a foil-lined pan before baking in a 400° oven for about 35 minutes. To accompany the pork, I made some seasoned potato wedges. I wasn’t too crazy about the potatoes, and neither was Chris. The pork was pretty good, though.
